GLUTEN-FREE PIZZA WITH QUINOA CRUST

Last night I was invited to dinner at my good friend Mia’s house, and she had made the most delicious and tasty gluten-free pizzas with thin quinoa crust! I asked her about the recipe to share on my blog. It’s definitely not the last time i’m eating this! Quinoa is a good gluten-free source of protein, iron, fiber, and a quick and flavorful way to get in a serving of whole grains that boost your body!
Pizza crust
Cooked quinoa (1 part quinoa and 2 parts water) Rosemary (dried), 1 egg, Buckwheat flour, Salt.
Cook the quinoa. Let it cool. In a small mixing bowl, combine the cooked quinoa and the remaining ingredients. Combine it all until a dough-like texture is achieved. Line a baking sheet with parchment paper and shape the dough into a circle or square. Bake for approximately ten minutes at 200 degrees celcius. Remove from the oven and add your toppings to your pizza. Bake the pizza again for about 10 more minutes, or until everything looks crisp and melted. Remove from the oven again, cut into pieces, and enjoy!
Topping
Pizza 1: Goat cheese, Rosemary (preferably fresh) Potato, Rocket, Good olive oil
Pizza 2: Ham, Portobello mushrooms, Tomato sauce, Parmasan
